Rock’N Fish sends their customers off with full bellies to start their mornings (or afternoons) right. Chef Roberto’s Huevos Rancheros, fresh lemon ricotta pancakes, slices of brioche French toast, all sorts of benedicts and much more await guests to Rock’N Fish’s weekend brunch—their newest addition to their eclectic menu.
Known around OC for their steaks and seafood, Rock’N Fish looks to have weekenders start their days right with all varieties of sweet and savory treats that they have on the new menu. “Since we opened in the former home of the Jolly Roger restaurant a year ago, our guests have shared stories about the brunch they used to enjoy here,” says Jim Donegan, proprietor of Rock’N Fish. “It was a natural choice to respond by introducing a weekend brunch that will allow our guests to enjoy popular brunch favorites while taking in our beautiful views of the Pacific.”

The Right Flavor
Chef’s Table events allow all the Ritz-Carlton chefs to showcase their talent. The Ritz-Carlton, Laguna Niguel recently kicked off a new monthly Chef’s Table Dinner series, led by Executive Chef Andres Jimenez and other selected chefs from the resort. The new series will allow diners to indulge in a special, seasonal four-course menu that each chef will play an individual role in creating. The first theme celebrated the Chinese New Year with creatively atypical plates by chef Andres, in addition to chefs Marissa Gerlach, Steve Wan, Brian Sundeen and Jim Fritz.
The limited monthly dinners will be borne of the bounty of the season and feature specific chef’s favorites. The series will include Market to Table, a special meal service that focuses on ingredients available at locals farmers markets; the highly-regional 250 Miles of Cuisine, which creates dishes from items raised and harvested within 250 miles of the resort; the self-evident Mushrooms, Mushrooms, Mushrooms and A Sneak Peek of Summer on the first calendar day of summer. With warmer weather just around the corner, it’s time to whip up a refreshing spring cocktail.The Tommy Bahama Hibiscus Key Lime Cocktail goes perfectly with an afternoon on the deck, looking out over the great Pacific.
Tommy Bahama Hibiscus Key Lime Cocktail
1½ parts vodka
½ part Cointreau
1 part hibiscus syrup
1 part pineapple juice
1 part fresh squeezed lime juice
5 cubes muddled fresh pineapple
Method: Mix all ingredients together and strain into a tall Collins glass, garnish with three floating key lime wheels.

The Chupacabra
1 ½ ounces Karma Tequila
½ ounce fresh squeezed lime juice
½ ounce fresh squeezed lemon juice
½ ounce organic agave nectar syrup
3 cucumber slices
5 cilantro sprigs
Method: Add salt to glass rim. Muddle cilantro and cucumber with agave syrup and fresh juices in the bottom of glass. Add ice and tequila and serve with a lime wedge. Head to Pacific Edge for hot cocoa with a kick and happy hour specials.
Pacific Edge specials: Monday is Industry Night at Pacific Edge, giving fellow industry workers the chance to enjoy 50 percent off burgers and mojitos. Tuesday features musician Kevin Miso playing live hits for patrons as they enjoy cocktails and watch the sun sink into the water. Every first and third Wednesday of the month is “Sing for your Dinner” Wednesday, which allows diners the opportunity to sing for a chance to win their dinner—sounds like music to our ears. And every Friday is “Ditch Friday,” which means that all cocktails are doubles.

6 ounces heavy cream
2 ounces Swiss chocolate
1 ¼ ounce Godiva chocolate liqueur
1 ¼ ounce Frangelico
1 ¼ ounce Tia Maria
